Spinach Artichoke Dip

My little brother and his girlfriend were coming over for dinner so I decided we needed an appetizer. Here's the recipe:

Defrost a 10 ounce package of frozen spinach.
Squeeze out as much water as you can.
Finely chop the spinach and place in a bowl.
Drain and finely chop a 12 ounce jar of artichokes. 
Add the artichokes to the spinach.

Mince 1/2 cup of jarred roasted red pepper. Add to the spinach and artichokes.
Mix the spinach. red bell pepper and artichokes until combined.
In a separate bowl place 1 cup shredded Parmesan cheese, 1 cup mayo, 1/2 teaspoon ground black pepper, 1/4 teaspoon salt and 1/4 cup shredded cheddar/jack cheese.
Mix until combined. I decided to add 1/2 teaspoon crushed garlic as well.
Mix in the garlic.
Add the mayo mixture to the veggies and mix until combine.
Spread dip in a 1 quart casserole dish.
Top with 1/4 cup shredded cheddar/jack cheese.
Bake at 350 degrees for 20 minutes. Serve warm with crackers. I forgot to take a picture of this right out of the oven instead you are getting our already diving in version!
