Batard

Last night I had a nightmare that I was being punished for a patient complaint... but my punishment was death! EEK! So, in my dream which was way TOO vivid I had to avoid a sniper who was trying to fulfill his job. I woke up at 3 am panicked, scared, and crying. I hate dreams like that. I laid in my bed and then decided to check under my bed and all around to make sure I was safe. On my way back to bed I said a pray and asked for peace. I know some people would say praying over a bad dream is silly but I kid you not I was scared out of my mind of the longest time. Here's to hoping happy dreams only tonight!

At work today we got our Christmas tree! Normally I would protest that Christmas is out in full force before my birthday but the tree is closest to me and it smells like heaven!

On my way home I decided I wanted to make a mini Thanksgiving meal only because I wanted more leftovers.... IE turkey sandwiches! While in the store I saw a sign (I've seen it before but it gets me EVERY time!) that says 'Batard bread $.99'. Look at the word carefully again. Batard. Several other words come to my mind... hehe! Apparently it's French for short bread.

I got my first Christmas card in the mail today from my Grandma (well she's sort of my grandma) but none the less it was fun to get a card and to be remembered.

Anyway back to mini Thanksgiving meal for dinner...

First  I chopped two pieces of celery, two carrot sticks, one lemon, and one yellow onion. I placed everything in my 9X13 Pyrex while I washed the turkey breast. I then placed the turkey breast on the veggies/lemon. At the store in the fresh herb isle I bought a poultry pack of herbs that came with sage, thyme and rosemary. I roughly chopped all of the herbs and added them to half of a stick of melted butter which I then covered the outside of the turkey breast. If I wanted to I could have placed the herb/butter between the skin and the meat but picking the herbs off is not fun. Then I seasoned with salt and pepper. Into the oven while I washed a million dishes!
I also made yams and mashed potatoes. I have a small
stove and small pans so thus everything was full!
 All done.. yummy!
Now before you go and judge me about the turkey timer not being popped up know that the 4.3 pound turkey breast was in the oven at 375 degrees for almost two hours! I checked the temperature with a meat thermometer in about a dozen places and everywhere said at least 170 degrees so I was done. I pulled the turkey breast out of the oven at almost 9 pm so it's going to become tomorrow's dinner. I then covered the turkey breast with foil while it cooled off. Now I have to go somehow get everything into my super tiny refrigerator. Night!
